Paola Tosi


Paola Tosi is an Associate professor in the School of Agriculture Policy and Development at Reading University, and currently Head of the Crop Science Department.  She has over 20 years international track record in research investigating grain, focusing on cereals and legumes. Her research interests span grain development and composition; investigation of compositional gradients across the grain tissues via a range of microscopy techniques; impact of milling and other primary grain processing on the functional properties of flour for baking purposes; enhancing the sustainability and nutritional quality of bakery products. She has been responsible and successfully carried out research funded both by public national and international funding bodies, as well as Agri-Food and Agri-Tech industry. She is a member of the Wheat Initiative Expert Working Group on Improving Wheat Quality for Processing and Health since 2015 and participated in the organization of several international conferences.
