Safia Bedre-dine
Safia Bedre-dine is a PhD candidate at the Process Optimization in Food, Agriculture, and the Environment (OPAALE) unit of the French National Research Institute for Agriculture, Food, and the Environment (INRAE). Her research is centered on the baking of flatbreads, with a focus on optimizing the process to reduce high baking temperatures (up to 350°C). Partial vacuum baking technology is used to lower the baking temperature of double-layered flatbreads while maintaining their expanded nature
