Elisa de Arcangelis


Elisa De Arcangelis is Researcher at the Dpt. of Science and Technology for Sustainable Development and One Health, Campus Bio-Medico University of Rome (Italy). She obtained the PhD at University of Tuscia-University of Molise (Italy) and then she was a post-doctoral researcher at University of Molise and Campus Bio-Medico University of Rome. During her PhD studies she worked on barley polysaccharides fructan and beta-glucan, spending a period as visiting PhD student at the Swedish University of Agricultural Science in Uppsala (Sweden). Her scientific experience is related to the evaluation of the technological aptitude of grains and flours, by-products valorization and use of non-conventional raw material for the development of innovative and functional cereal-based foods. She is currently Honorary Associate Editor for International Journal of Food Science and Technology.
