Emilie Urban Sloth is a Senior Development Scientist in Research & Development within the Combinatorial Microbiology Department at Novonesis. Emilie’s professional interest is product development with focus on fermentation technology and food microbiology. She has a background in Food Science & Technology from the University of Copenhagen. In the Department of Combinatorial Microbiology, her research focuses on developing single and combined starter cultures for various food applications such as plant-based alternatives, fermented beverages, and fresh dairy.
