Kimberly Calonico
Kimberly Calonico a full-time PhD student in Biotechnology at Tecnologico de Monterrey. She holds a bachelor's degree in Food Science Engineering. Despite being at the early stages of her scientific career, she is passionate about developing enriched foods with medicinal plants. Her interest stems from the fact that plants contain secondary metabolites that can contribute to the creation of functional foods. Kimberly has already published an article titled "Digestion-Related Enzyme Inhibition Potential of Selected Mexican Medicinal Plants (Ludwigia octovalvis (Jacq.) P.H.Raven, Cnidoscolus aconitifolius, and Crotalaria longirostrata)." Currently, she is actively working on another article focused on incorporating these plants to lower the glycemic index of bread.
