Maria G. Robles Hernandez


Maria Robles is a third year Ph.D. student in the Food Microbiology laboratory under the supervision of Dr. Michael Gänzle in the Department of Food Science and Technology at the University of Alberta. Her research interests include cereal fermentation, clean label and alternative flours for baking goods and up-cycled ingredients. Her research project focuses on the use of Bacillus spp. ferments as a novel ingredient to improve bread quality. She has one paper under review and her team won first place in the Student Product Development Competition at Cereals & Grains 2023 IL, USA. She is currently funded by the Zenia Hawrysh Masters Scholarship in Food Science.
