Carina Stoll
Carina Stoll studied at the Technical University of Munich and holds a master's degree in food chemistry. She is currently a research assistant at the Chair of Brewing and Beverage Technology at the Technical University of Munich. Here she is also working on her doctorate under the supervision of Prof. Dr. Mario Jekle (University of Hohenheim). The Ph.D. elucidates the mode of action of enzyme-active wheat malt in cereal-based products. The focus here is on the enzymatic reactions of endogenous alpha-amylase and proteases of enzyme-active wheat malt.
