Lizette Oudhuis


Lizette Oudhuis is professor at the Applied University of Applied Science Van Hall Larenstein, Leeuwarden and Hanze University of Applied Science, Groningen, The Netherlands. Her research topics are in the field of healthy food and nutrition. Her main interests are valorisation of food waste streams, healthy and sustainable product development, food matrix interactions, functional properties, digestibility, bioavailability, bio accessibility, plant-based ingredients such as proteins, fibres and starches.
