Neslihan Tas
Dr. Neslihan Taş is working as assistant professor at the Department of Food Engineering at Hacettepe University. She has completed her PhD in 2017 under supervision of Prof. Dr. Vural Gökmen on the chemical reactions mainly Maillard reaction and caramelization during hazelnut roasting. She continued with mitigation of acrylamide and flavor formation in bakery products as well as sugar reduction in bakery products. She has published more than 20 scientific papers and involved in international projects. She is currently an editorial board member of ‘Food Research International’ and ‘Food and Humanity’.
