I am a PhD candidate in the Laboratory of Food Chemistry and Biochemistry, KU Leuven, Belgium. In the context of my PhD, I am investigating the sub-aleurone layer of wheat, with a focus on protein composition and functionality. My aim is to establish a connection between fundamental insights and their practical relevance in the context of wheat bread systems.
