Alba Du Toit


Alba du Toit is a senior lecturer and researcher at the Department of Sustainable Food Systems and Development at the University of the Free State in South Africa. She leads a research team to implement nixtamalization of maize in a country where maize is the staple food. The research entails quantitative needs assessments, consumer attitudes determination via questionnaires, and the development of consumer-acceptable products and recipes, which were evaluated using Just-About-Right scales and consumer-liking tasks. She has published over twenty papers in Q1 and 2 international peer-reviewed journals.
