Charlotte Stemler


Charlotte Stemler ist a postdoctoral researcher at the Department of Bioactive and Functional Food Chemistry, Institute of Applied Biosciences at the Karlsruhe Institute of Technology, Germany. After graduating with honors in food chemistry, she did her doctorate on the topic of substrate specificity of lipases for use in fine bakery goods. Her research combines technofunctional studies on bakery goods with instrumental analytics, including mass spectromentry-based lipidomics.
